Tongatapu and ʻEua serve a hearty Polynesian table built around the sea and the earth oven. The signature dish is ʻota ʻika, raw fish marinated in lime and coconut, while lu pulu (taro leaves simmered in coconut cream) and umu-cooked feasts anchor celebrations. Fresh lobster, snapper and octopus come straight from the lagoon, and resorts pair them with tropical fruit such as mango, pawpaw and pineapple. Eating is unhurried and communal, and a cold drink at a waterfront bar finishes a dive day nicely.

Tongatapu & ʻEua (Main Island & Neighbouring Island)

Fly into Fuaʻamotu International Airport (TBU) near Nukuʻalofa on Tongatapu, the main international gateway. ʻEua is reached by a short domestic flight to Kaufana airstrip or a ferry from Tongatapu. Most Tongatapu sites launch from Nukuʻalofa or the nearby resort islands of Pangaimotu, Atata and Fafa, while ʻEua dives leave from ʻOhonua on the island's sheltered east coast.
