French Polynesian cuisine is a delicious fusion of traditional Polynesian cooking methods with French culinary influence. Mataiva and Makatea represent two of the most geologically unusual diving environments in French Polynesia. Mataiva is a small atoll with a unique flooded karst system where freshwater springs bubble up inside the lagoon, creating distinctive thermoclines and haloclines that support unusual marine communities. The coral gardens thrive in the clear lagoon water, providing excellent macro diving and night diving opportunities that are distinct from typical atoll environments. The geological formations visible underwater, including submerged limestone pinnacles and channels, create a fascinating underwater landscape unlike any other Tuamotu destination. Makatea is dramatically different, an uplifted coral island rising sixty metres above the ocean with sheer vertical cliffs that continue underwater as spectacular wall dives. The walls are patrolled by grey reef sharks, with dolphins, pilot whales, and humpback whales encountered seasonally in the surrounding waters. Limestone caverns and swim-throughs formed by ancient wave action add variety to the wall diving. The island's history as a phosphate mining site has left industrial ruins that add an eerie exploration element above water. Both islands are sparsely populated with minimal tourist infrastructure, requiring adventurous divers to bring their own equipment and arrange informal diving through local contacts. The combination of Mataiva's unique karst lagoon and Makatea's dramatic uplifted walls provides geological diversity that complements the standard atoll diving found elsewhere in the Tuamotus. For geologically curious divers and those seeking genuinely unusual underwater environments, this pair of islands offers experiences found nowhere else in the Pacific.
